Chocolate Chunks and Courgette Loaf

Image
There's nothing like chocolate for cheering a day up. I was given a large bar for Easter, so wanted to stretch it out by using it in a cake. I love loaf cakes, and this is one of my favourites. It uses courgettes as well as chocolate, and I just happened to have one medium sized one that needed using up. It also uses soft brown sugar, a bonus as I've no more caster sugar! You need: 2 eggs, 80ml honey, 120ml sunflower oil, 100g soft light brown sugar, 2 tspn vanilla exctract, 1/2 tspn baking powder and 1/2 tspn bicarb, 1 heaped tspn coffee granules, 45g cocoa powder, 210g plain flour, 2 small courgettes or 1 medium grated, and 200g dark chocolate cut into chunks and divided into  2 x100g portions Preheat oven 170C/gas4           Grease and line a 200g loaf tin Whisk together the eggs, honey, oil, sugar and vanilla. Sift together in another bowl the flour, bicarb, baking powder, coffee and cocoa: mix together then gently add to the egg mixture. Fol...

Toscakaka or Swedish Caramel Almond Cake

Image
I love Scandinavian baking and have several Scandi baking books, but to honest, I've never baked from them. Reading an article recently on this type of baking, I thought I must use my books, so decided to make a caramel almond cake. I've adapted it from 'Scandilicious Baking'. For the cake you need; 20ml milk, 1 tspn lemon juice [or 75ml buttermilk] 75g butter, 3 eggs, 150g caster sugar, 1 tspn vanilla extract, 150g plain flour, 1 tspn baking powder and a pinch of salt. For the topping:  150g flaked almonds, 125g butter, 125g light brown sugar, 50ml milk and 1/2 tspn sea salt  Preheat oven 160C/gas3                     Grease and base line a 23cm springform cake tin Stir the lemon juice into the milk to sour it, or use 75ml buttermilk instead. Toast the almonds till they're a light golden colour [takes about 6 mins]. Melt the butter over a low heat then pour into a bowl and allow to cool. Beat the eggs, sugar an...

Chocolate Cheesecake Brownies

Image
I like brownies, and my friend gave me this recipe which is a bit different from your usual one. It has cream cheese added to the batter. Preheat oven 180C/gas4               Grease and line a 18x24cm tin Put 125g butter, 125g dark chocolate and 200g light brown sugar in a pan; stir over medium heat till melted. Take pan off the heat and beat in 3 eggs. Add 50g sr flour, 50g cocoa and stir into the mixture. Pour into the tin. Beat 200g cream cheese [use full fat not low fat] with 50g icing sugar till smooth. Spoon into the batter then swirl with the tip of a knife to get a marbled effect. Bake the brownies for 35-40 mins. I liked these - you get the taste of the traditional brownie with the added texture of a cheesecake. They mix together well. Do I prefer it to the normal brownie - no, I don't think so, but it makes a change! I thought cooking them for so long would make them hard, but the crumb was moist.

Banana and Caramel Cake

Image
A quick post. It's the usual story - what to do with 3 very ripe bananas in the fruit bowl. I also had a tin of Carnation Caramel coming to its 'use by' date, so decided to make a cake combining both of them. The Caramel is very sweet so there's only a small amount of sugar in the cake. I wanted an easy cake to cut, so made it in a loaf tin, Preheat oven 180C/gas4                     Grease a 900g/2 lb loaf tin Cream together 75g butter and 25g soft brown sugar till fluffy. Beat in 1 egg then add the caramel and mix well. Sift together 225g plain flour and 2 tspn baking powder then fold these into the mixture. Stir in 3 ripe and mashed bananas. Pour the batter into the tin and bake for an hour. I covered the top with foil for the last 15mins as it was getting very brown. Cool in tin for a few mins then turn onto a wire rack to cool. I really expected it to be very sweet, but it isn't. The crumb is soft and I liked the bits o...

Banana flapjacks

Image
Seem to have had a lot of very ripe bananas lately. Am a bit fed up with banana loaves and cakes, but was given a recipe booklet recently about Fairtrade bananas, made up with recipes given by some of our church members. We love flapjacks, so banana ones seemed a great idea. I made them in a swiss roll tin, as we like them thin, but if you prefer thicker ones, use a square cake tin instead. 125g butter 85g light brown sugar 2 tbspn syrup 350g oats 1/2tspn baking powder 1 tspn cinnamon 2 medium ripe bananas Preheat oven 180C/gas4 Grease a Swiss roll tin  23 x 33cm or a 20cm square cake tin Melt butter, sugar and syrup in microwave or on hob. Add oats, baking powder and cinnamon then add mashed bananas. Spoon in tin and smooth top with back of a spoon. Bake 20-25 mins till golden and firm. Cut into bars while hot then cool in tin. I made 15 bars. We really liked the added texture of the banana, but they are a soft flapjack, not a crisp one. I'll certain...
