Galette de Rois aux pommes

 Not been around for a while because I haven't been well. Hope everyone had a good Christmas and a belated Happy New Year! It's January, so must be Galette de Rois time again! I love these and made several of them to take to our French group's postponed Christmas get together. One of them was apple; I know I have already put 2 or so recipes for apple ones on here, but this one is so quick and easy that it's almost a must make! You need: 2 sheets of puff pastry, 125g caster sugar, 1 tspn vanilla extract, 500g apples, peeled and sliced, 1 tspn cinnamon and 1 egg yolk.  Pr4e4heat oven to 220C/gas7                 You need a baking sheet Put the apples in a pan with the sugar, vanilla and cinnamon. Simmer for 20 mins then put aside to cool. Roll out of the pastry sheets and cut a large circle [I drew around my biggest flan tin]. put this on the baking tray and spread the apple mixture on top, leaving a 3 cm edge all round. Pecan, Apple and Cider Cake

Something to cheer us up in these miserable days. Was given a bottle of local cider, and had several apples needing using up, so found this recipe from an old Woman's weekly magazine. You need:  330ml cider, 150g melted butter, 4 medium apples, peeled, cored and grated, 2 large eggs, 150g soft brown sugar, 300g plain flour, 2 tspn bicarb, 1 tspn mixed spice, 1 tspn cinnamon, 1/2 tspn grated nutmeg, 200g raisins or sultanas and 100g roughly chopped pecans. Preheat oven 180C/gas4         Grease and line a 20cm spring form cake tin. Pour cider into a pan and bring to boil. Lower the heat to simmer and let the cider reduce. You need about 100ml. Melt the butter in another pan and pour the cider over to cool a bit until just warm. Mix the sugar and  eggs into the apples and pour in the butter and cider. Mix together. Malvern Pudding

I was given a bag of apples and wanted to make something different. Browsing through my recipe folder I found this recipe. It's an egg custard over apples, but the custard is made with cream. Lovely to have as a pudding in this miserable weather. For the apples:  50g butter, 1 kg cooking apples, 50g sugar and the zest of 2 lemons For the custard topping: 825ml double cream, 50g sugar, 4 eggs plus 2 yolks, 50g demerara sugar and 1/2 tspn cinnamon Heat a frying pan and add the butter and apples, peeled cored and sliced.  Cook for 6-7 mins till soft but still keeping shape. Add the sugar and zest and cook for a further 2-3 mins. Pour into an ovenproof dish. Beat the eggs, yolks and sugar together; warm the cream over a gentle heat then add to the eggs and gently mix in. Pour over the apples. Mix the brown sugar with the cinnamon and sprinkle over the top. Bake in preheated oven, 180C/gas 4 for about an hour, till set but still a bit wobbly. Chocolate Cappuccino Tart and Apple, Cinnamon and Caramel Cake

I made Mary Berry's Chocolate Cappuccino Tart as our Easter dessert from her recent Quick Cooking series. My son and family were due to arrive for Easter Sunday lunch, but he had to go into work for an emergency, so my daughter and I were left with a huge leg of lamb and Mary's dessert! Thought enough cream had gone into it! It's extremely rich and a small slice is enough. Maybe I should have tried to freeze it rather than to eat it all! A Normandy Apple Tart

Lovely Autumnal look to the trees around here, so thought of making something with apples. I love apple cakes, but having just made 2 for a leaving lunch, thought I'd make a tart. Having yet another sort out in a cupboard, I found a bottle of Calvados with just enough left to put in my tart! Got to be a Normandy Tart with Calvados! This is yet another recipe I got from my lovely neighbour in France, and I've made it many times for friends and family. You need: 1 pack of butter puff pastry, 4 medium apples, 160g caster sugar, 50g butter, 1/2 tspn cinnamon, 2 eggs,100ml crème fraîche, 1 tbspn Calvados and some flaked almonds Preheat oven 210C/gas7                       Grease a tart tin lightly Peel and core the apples and cut into thick slices. Apple Gingerbread Tart

My lovely French friend sent me some some French cookery magazines, and this tart was in one of them. The gingerbread isn't like our Parkin, it's a 'Pain d'épices', a spice cake. You could buy a gingerbread loaf and crumble it. 2 packs puff pastry, 6-8 apples [I used Gala], 8 slices gingerbread, 50g butter, 50g sugar, 1 egg yolk, cinnamon Preheat oven 200C/gas6          you need a tart tin Roll out with of the packs of pastry and line the tin. Prick all over with a fork. Crumble the gingerbread and sprinkle over the pastry. Peel the apples and cut into quarters. Put these onto the gingerbread. Clafoutis aux Pommes

This is one of our favourite apple desserts. Traditionally a clafoutis is made with cherries, but my friend also makes this one with apples, and kindly gave me her recipe. Using cornflour isn't traditional either, but it works well. You need: 4 large or 6 small apples [I used Gala], 2 eggs, 100g caster sugar, 40g cornflour, 250ml single cream, 1 tspn vanilla extract and 1/2 tspn cinnamon Preheat oven 180C/gas4 Grease and flour a deep dish - the one I used was 23cm in diameter and 8 cn deep. Peel the apples and cut into slices. Layer into the base of the dish. In a bowl beat the eggs and sugar together till white and fluffy. Add the sieved cornflour, cream, vanilla and cinnamon and mix well. Pour over the apples and bake for 30-40 mins. It can be eaten warm or cold. I sprinkled some sultanas onto my clafoutis before baking, and sieved some icing sugar over the top when baked. Apple Galette de Rois

I love to make one of these traditional French galettes, but wanted to make it a bit different so added some apples. You need: 2 packs of puff pastry, 3 eating apples, 200g crème fraîche, 200g ground almonds, 100g caster sugar + 40g, 3eggs and 1 egg yolk Preheat oven 220C/gas7                 A baking tray Cut the apples up into small cubes and put into a pan with the 40g of sugar. Caramelise for about 10 mins. Add 1 tbspn of the cream and mix together. In a bowl mix together the rest of the cream and the 100g of sugar, the ground almonds and eggs. Put this in the fridge for 10 mins. Roll out the pastry sheets. Cut out 2 large circles [I used a large dinner plate]. Put one of the circles on the baking tray and cover with the apples. If you have one, put a bean or little fêve in then spoon over the almond mixture. Cover with the second circle of pastry and pres the edges together. Cinnamon Sugar Apple Cake

My love of cinnamon is well known, so when I got given some apples, I decided to try a recipe given to me ages ago by an American friend. It's nothing special to look at, but tastes great - that's of course, if you like cinnamon! It's not overwhelming, as there's none in the cake only in the topping. The recipe uses butter milk and oil. The amount of cinnamon sugar topping suggested for the cake was far too much, even for me, so I reduced it drastically, and there was still plenty. 225g light brown sugar, 75ml oil, 1 large egg, 225ml buttermilk, 1 tspn bicarbonate of soda, 1 tspn vanilla extract, 350g plain flour, 180g chopped apples [weight after peeled - I used 3 eating apples] Topping: 2 tbspn granulated sugar and 11/2 tspn cinnamon Preheat oven 160C/gas3                  Grease and base line a 20cm round cake tin. Lemon and Apple Tart

 I first had this tart in a little bistro-style restaurant in France. It's very different from the usual apple tart, using grated apples and including lemons in the filling. As I was in a hurry to get it made, I cheated and bought some shortcrust pastry from Waitrose, but of course you can make your own. The recipe was on a bag of sugar I bought ages ago in France! What I loved about the ready-made pastry in France, was that is came in a round shape ready for the tart tin. Wish ours did! You need:  a block of shortcrust pastry, 3 large eating apples, 150g caster sugar, 2 eggs, 80g melted butter and 2 lemons, washed well. Preheat oven 200C/gas6.                          Grease a fluted tart tin. Zest the 2 lemons and put it in a small bowl then add their juice. Bavarian Apple Cake

You can never have too many apple cake recipes, and I needed to make something for friends coming for a cuppa and chat. My lovely German dil, whom I've mentioned several times on here, gave me this recipe. It's easy to make, but is an unusual cake. Preheat oven to 220C/gas8 .  Line the base of a 20cm springform tin and grease the sides. Cream 125g butter with 75g caster sugar and 1/2 tspn vanilla extract, then fold in 150g plain flour. It will be a bit of a crumbly mixture. Press this into the base of the tin and spread with3 tbspn of seedless raspberry or apricot jam. In another bowl beat together 225g cream cheese, 45g caster sugar, 1 egg and 1/2 tspn vanilla extract and pour this over the jam. Peel and slice 4 medium apples; I used Coxes, then toss the slices in 75g of caster sugar and 1 tspn of cinnamon till they're well coated and spread these evenly over the cheese mixture. Lumberjack Cake

My lovely Mum left a folder full of recipes she'd cut out from newspapers, magazines etc, and I was browsing through these and found this cake. It came from a series of recipes of cakes that were 'Old Fashioned'. It didn't say where the lumberjack comes into the picture!   I had some dates that needed using, so instead of the usual sticky toffee cake or pudding I thought I'd give this recipe a try. It's not a great heavy cake for beefy men chopping down trees, although I'm sure they'd love it, it's an old fashioned apple and date cake with a yummy caramelised coconut topping. Preheat oven 180C/gas4 and grease and line a 23cm springform tin. Two Galettes - Apple and Cinnamon and Raspberry and Almond

January is the month for Galettes.  Usually I make the traditional Galette de Rois, puff pastry with a lovely almond cream filling [there's a recipe on here for one],  but I decided to try something different. I had some apples and raspberries to use up, so decided to make an apple and cinnamon one, and a raspberry and almond one. Cinnamon and apple are a marriage made in heaven for me, but wasn't sure about almonds with raspberries, but it turned out well. Using bought butter puff pastry makes them so quick and easy to make. The French bought puff pastry comes in a round, very useful for making tarts etc. I haven't found any round ones here.
