Carrot Cake Muffins

 I’m a great muffin fan and have adapted my basic recipe, given to me by an American friend, many times. This is my latest idea. I made the muffins and was asked by a friend if I could make some for a party with the icing you usually get on a carrot cake.  280g plain flour, 1 tbsps baking powder, 1 tspn mixed spice, pinch salt, 115g soft dark brown sugar, 200g grated carrot, 50g chopped pecans or walnuts, 50g sultanas, 2 eggs, 175ml milk, 6 tbsps sunflower oil Optional: icing - 75g soft cream cheese, 49g butter and 35g icing sugar, sprigs of orange zest Preheat oven 200C/gas6. Grease a muffin tin or use muffin cases. Sift together the flour, baking powder and spice. Add carrots, sugar walnuts and sultanas and stir together. In a jug add the milk, oil and beaten eggs. Mix well. Make a well in flour mix and add milk mixture. Stir gently till just mixed. Don’t over mix or muffins will be heavy. Soon into the muffin tin - I use an ice cream scoop. Chocolate and Hazelnut Biscuits

When 2 of my grandsons, aged 13 and 16 came to visit, to keep them off their x-boxes, I baked with them! We made these chocolate biscuits, and they were a great hit. Sadly there weren't any left to take home to their brother, so next time we'll have to make double the amount! Preheat oven 190C/gas5                Line 2 baking trays with parchment paper. you need: 125g butter, 125g caster sugar, 50g dark brown sugar, 1 beaten egg, 1/2 tspn vanilla extract, 100g plain flour, 25g cocoa powder, 75g oats, 1/2tspn baking powder, 1/2 tspn bicarb, 125g chopped hazelnuts and 25g demerara sugar Beat the butter and caster and dark brown sugars together till nice and smooth. Add the egg and vanilla and beat again. Mix together the flour, cocoa, baking powder and bicarb. and add to the batter. Stir in the nuts. Take tspns of the mixture and roll into about 30 balls. Put the demerara sugar on a plate and roll the balls in it. Put the biscuits about 5cm...

A Duo of Cookies

I made a couple of batches of cookies recently, so thought I'd post the recipes here. They're both very easy and quick to make. The first one is for Chocolate-chip and Oats cookies, and the second one is for Ginger and Chocolate cookies. For the Choc-chip and Oats ones  - Preheat oven 180C/gas4  Mixture makes enough cookies to cover 3 baking sheets, but I did it in 2 batches, as I only have 2 baking sheets. Beat together 125g butter, 100g soft brown sugar, 110g caster sugar and 1/2 tspn vanilla extract till pale and thick, using an electric hand beater, then beat in 1 egg. Fold in 110g oats [not the jumbo ones]. sieve 150g plain flour with 1/2 tspn baking powder and 1/2 tspn bicarb. together and fold into mixture. Finally fold in 175g dark chocolate which has been chopped [not too small] and 150g peeled and chopped hazelnuts [you could toast them first]. A Coffee Cake

There are times when you just want something nice to have with your cuppa or coffee. This isn't a cake with coffee in it, but is an American cake suitable for eating with coffee, or at least I presume that's what a coffee cake is for!. It's the filling that makes this cake - I used some dark chocolate chopped up, but you could use some nuts - chopped walnuts or pecans.  It come from a charity shop book I bought ages ago called ' Cakes my Mom used to make'. I've made this cake several times, and have adapted the recipe to suit what I wanted.  I make it in a 23cm Bundt tin, so it's a big cake. Preheat oven 180C/gas4 For the filling: Mix together 170g dark brown sugar, 1 tbspn cinnamon, 1 tbspn cocoa powder, 160g chopped dark chocolate or chopped nuts. Fruit and Spice Loaf

A quick post, as the recipe is online. Another good recipe for a teabread - just fancied making one to have with a cuppa.  I changed a few things in the recipe - I used 'Quatre Epices', a French spice mix which has cloves, nutmeg, cinnamon and ginger, and the cloves and nutmeg give the cake a lovely spicy musky  flavour. I also used dark muscovado sugar as I didn't have any of the light. There's marmalade in it and I used a thick cut, but cut the pieces of peel into small bits. The wholemeal flour makes it quite a dense cake, but the flavours are great, and we enjoyed a slice with some butter. I think if I made it again, I would use part wholemeal and part white flour for a better texture. Toffee Apple Cake

Recently it was Bramley Apple week, so I decided to make an apple cake, and found this WI recipe amongst my mil's collection, but to be honest, for me, it doesn't really live up to its name. It needs a stronger toffee flavour, but I liked the idea of enhancing the apple flavour by using Calvados. We love apple cakes, and I have lots of recipes, but this is the first toffee apple cake I've tried. I had a look online and there are lots of different ideas  - I liked   this one  from Rosie Bakes It blog, but there seems to be a bit too much topping for me and she adds dates, just as I did for my Sticky Toffee cake, and I didn't want to use dates - I want the toffee flavour to come from something else.
